Blackberry Balsamic Grilled Chicken Salad with Crispy Fried Goat Cheese
If you are trying to eat healthy this recipe is a great one.  Made this last night for dinner, it is definitely a keeper.  Full of flavors and textures this salad packs it all in.  It's funny how once you start eating healthier again the cravings for sweets and oily foods do disappear.  Chicken breast is my "go to" food for any night I don't know what to make.  With so many ways to prepare it I always have a load of it in the freezer ready for me to turn it into a healthy meal.  

This recipe from start to finish takes about 45 minutes including cook time.  Once you start making salad dressings at home the bottled just don't add up.  The berry balsamic this makes is very flavorful, minimal oil and a perfect companion for this salad.  Goat cheese...I can't write enough how I fell in love with the flavor years ago.  The simpleness of breading and frying it in minimal oil is the perfect "treat" to this salad.  I hope you enjoy making and eating this as much as I did.
